    Chicken Breasts with Creamy Shells

    List of Ingredients




    6 oz medium shell pasta; cooked
    1 tablespoon olive oil
    1/2 cup shallot; chopped (can substitute onion)
    1/2 cup fennel; chopped (can omit)
    12 oz chicken breast
    14 teaspoon paprika
    Salt
    2 cup frozen spinach; drained, squeezed dry
    1 cup skim milk
    1/4 cup parmesan cheese; grated
    1 tablespoon vinegar balsamic

    Recipe



    cook and drain pasta

    saute shallots and fennel in oil til tender. Add chicken; sprinkle with
    paprika and salt. Cook until golden and cooked thru. Transfer to plate,
    keep warm.

    Add spinach to same skillet; cook stirring 2 minutes. Stir in milk, cheese
    and vinegar. reduce heat to low; simmer 5 minutes, until liquid is reduced
    by half. Add pasta to skillet; toss to mix well.
