    Rueben Casserole

    List of Ingredients




    4 chicken breast halves, boned and skinned
    1 can sauerkraut (16 oz.) drained
    3/4 C grated Swiss cheese
    1/2 C mayonnaise, regular or lite
    1/4 C Thousand Island dressing, regular or lite
    1 medium tomato, thinly sliced
    2 slices rye bread, cut into 1-inch cubes

    Recipe



    Heat oven to 375. Rinse and pat dry chicken. Spread sauerkraut in square baking pan, 8x8x2. Top with chicken breasts, sprinkle with cheese. Mix mayonnaise and Thousand Island dressing and spread evenly over cheese. Top with tomatoes and sprinkle with bread cubes. Bake, uncovered, 40-45 minutes, or until chicken is no longer pink when cut. Let stand 5 minutes and serve. Serves 4.
