    Zucchini Gratin with Goat Cheese

    List of Ingredients




    2 LB. zucchini, coarsely shredded
    salt and freshly ground pepper
    2 TBS. olive oil, divided
    2 cloves chopped garlic
    1/4 C parsley
    2 TBS. chopped basil
    2 eggs, beaten
    2 oz goat cheese, crumbled
    non-stick cooking spray
    2 TBS. dry seasoned breadcrumbs

    Recipe



    Heat the oven to 400 degrees. Coat a 1-quart shallow baking dish with a nonstick cooking spray. Place zucchini in a bowl, add S&P to taste and mix gently. Let stand for 5 minutes. Drain zucchini of any water that may have collected in the bottom of the bowl. Heat 1 TBS. of oil over medium heat in a large non-stick skillet. Add zucchini and cook 10 minutes until all the moisture has evaporated. Add the garlic and cook 5 minutes. Stir in parsley and basil and remove from heat. Beat the eggs and goat cheese together in a large bowl. Stir in the cooked zucchini. Spoon into the baking dish and top with
    the bread crumbs and remaining tablespoon of oil. Bake until browned, 20 to 30 minutes.
    Serves 4
