    Tammy's Dressing

    I use a large and small pone of cornbread... (made in a iron skillet with cornmeal mix, egg, milk and a little melted shortening)
    1 chicken, boiled and deboned and chopped,(save stock for dressing)
    1 onion, chopped fine
    2 stalks of celery, chopped fine (if desired)
    1 stick margarine melted
    2 eggs, beaten
    1 cup milk
    sage, pepper and salt to taste
    Stock from boiled chicken or canned chicken broth if prefered.

    Crumble cornbread into crumbs with hands, saute onions and celery in melted butter till just softened, mix chicken, onions, celery, eggs, milk, and seasonings into cornbread mix well. Add stock till very moist almost soupy... in fact it is soupy... bake in a greased baking pan in a 425* oven for about an hour until done... do not over bake though... it is a moist dressing.
