    Poultry Perfect Rub

    List of Ingredients

    3/4 cup paprika
    1/4 cup ground black pepper
    1/4 cup cellery salt
    1/4 cup sugar
    2 Tablespoons onion powder
    2 Tablespoons dry mustard
    2 teaspoons red cayenne pepper
    Zest of 3 or 4 lemons, dried and minced

    Recipe

    Mix the spices thoroughly in a bowl. Store covered in a cool, dark pantry.

    Note: Lemon zest can air-dry overnight. If you're in a hurry, dry the zest in a 225 degree F oven or smoker for 8 to 10 minutes.

    Yield: about 2 cups
