    Chicken & Rice Casserole

    List of Ingredients

    1 Whole broiler chicken
    2 cups "Della Gourmet" (Basmati) rice
    1 cup chopped celery
    1 cup chopped onion
    1 cup chopped green pepper
    6 ounce can mushrooms, stem & pieces
    1 can (6 oz) water chestnuts slivered, drained (optional)
    1/2 cup butter
    1 teaspoon salt, (for rice)
    salt & pepper to taste
    8 ounce mild cheddar cheese (optional)

    Recipe

    Boil Chicken and debone - Save Broth.
    Cook Rice in 4 1/2 cups of chicken broth with 1 teaspoon of salt for 15 minutes.
    In a skillet, saute celery, onion, green pepper in butter - add mushrooms and water chestnuts.
    Cook a few minutes longer.
    Mix with rice and deboned chicken and 1/2 to 1 cup of chicken broth and salt and pepper.
    Add 1/2 of the cheese in mixture.
    Put into 1 large or 2 small buttered casserole dishes.
    Put remaining cheese on top.
    Preheat oven to 350 degrees F.
    Bake 30 minutes.
    Serves 8 to 10
    Note: needs only a salad and toast for a meal.
