    Spaghetti with Garlic Oil Sauce

    List of Ingredients

    4 quarts of water
    12 ounces uncooked Spaghetti
    1 1/2 teaspoons salt
    1/3 Cup Extra Virgin Olive Oil
    7 average-size garlic cloves
    2 Tablespoons fresh basil, or parsley, chopped fine
    1/4 teaspoon red pepper flakes
    2 Tablespoons grated Romano cheese

    Recipe

    1. Bring water to a rapid boil in a 6 quart pot. Add salt and stir.
    2. Add Spaghetti and stir until flexable. Cook until almost "al dente", (tender but firm), about 8 or 9 minutes. Don't over cook!
    3. Drain in a colandar. Do not rinse. Set aside.
    4. Clean and rinse pot with hot water. Dry inside of pot with paper towel. Use same pot to heat oil on medium heat.
    Press garlic cloves with garlic press (or press with side of chef's knife and mince garlic very fine). Add garlic to hot oil. Stir and heat until garlic starts to sizzle, about 3 minutes. Do not brown! Remove from heat and add red pepper flakes and half the herbs. Stir to mix flavors in oil.
    5. Add drained Spaghetti to pot with garlic oil. Turn heat back on to medium. Add the remaining herbs and mix well until oil coats Spaghetti and ingredients are well mixed. About 3 minutes. Turn off heat. Add the cheese and toss to distribute all ingredients.

    Note:
    This Serves 4 as a large side dish with another main course like my Veal Parmigiana Recipe.

    Note2: The twist to this combination is the Veal has the Red Tomato Sauce and the Pasta has a Garlic, Oil & herb flavor of it's very own. (Hey, am I an inventor, or what?!) Blend it all out with Italian Bread and a Salad.... And, an Italian Red Wine... of course!
    The only thing missing in this meal is the Romantic Italian Music & Candle Light Mist!
