    Southern Fried Okra

    List of Ingredients




    1 to 1 1/4 pounds fresh okra pods, (under 2 1/2 inches each)
    Ice Water to cover
    2 teaspoons salt
    2 cups cornmeal, stone-ground
    Peanut Oil for deep-frying

    Recipe



    1. Place the okra in a bowl and cover with ice water. Add salt. Refrigerate for 30 minutes to plump the okra.
    2. Spoon the cornmeal into a medium-size brown papper bag. Drain the okra and cut into thin rounds.
    3. Pour the oil into a heavy saucepan, to a depth of at least 3 inches. Heat the oil to 360 degrees F.
    4. Dredge the okra in the cornmeal and fry until the cornmeal deepens slightly in color, a matter of seconds. Drain the okra and serve immediately.
