    Cornbread: Great Smokies Spoonbread

    List of Ingredients

    1 cup cornmeal (preferably stone-ground)
    2 cups cold water
    2 teaspoons salt
    1 cup milk
    2 or 3 eggs
    2 tablespoons fat (butter, bacon grease)

    Recipe

    Mix meal, water, and salt. Boil 5 minutes, stirring. Add milk, well-beaten eggs, and fat. Mix well. Pour into well-greased hot pan or baking dish. Bake 50 minutes at 375 degrees. Serve from dish.
