    Pie Crust: Wheatless Pie Crust

    Makes 1 9-inch Single Crust
    » Sift 6 times:
    1/2 cup cornstarch
    1/2 cup finely milled rye flour
    The repeated sifting is very important.
    Work as for pastry and add:
    1/2 cup fine dry cottage cheese
    1/2 cup 70° butter
    1/2 teaspoon salt
    Chill the dough from 2-12 hours. Roll and place in pans.
