Applesauce Cheesecake With Toasted Pecan

1¼ cups graham cracker crumbs
½ cup chopped pecans, toasted*
¼ cup firmly packed brown sugar
¼ cup butter, melted
FILLING:
3 (8-oz.) packages cream cheese, softened
1 cup sugar
2 tablespoons flour
3 eggs
1 cup applesauce
½ teaspoon cinnamon
1/8 teaspoon nutmeg
TOASTED PECAN SAUCE
½ cup butter
1¼ cups brown sugar, firmly packed
2 tablespoons light corn syrup
½ cup whipping cream
1 cup pecans, toasted
Recipe
Heat oven to 350 degrees. In medium bowl, combine all crust ingredients; mix well. Press in bottom of 10” spring form pan. Set aside.
In large bowl, beat cream cheese, sugar and flour until light and fluffy. Add eggs, one at a time, beating well after each addition. Add remaining ingredients; blend well. Pour into crust-lined pan. Bake 50 to 60 minutes or until center is set. Cool. Refrigerate overnight. Serve topped with warm sauce.
TOASTED PECAN SAUCE:
Melt butter in medium saucepan. Stir in brown sugar and corn syrup. Bring to a boil, stirring constantly. Gradually stir in whipping cream; return to boil. Remove from heat;
stir in pecans. Yield: 2 1/4 cups
*To toast pecans, spread on cookie sheet. Bake in 375-degree oven for 5 to 10 minutes or until golden brown, stirring occasionally.
