Cheesecake with Toasty Oatmeal Crust

DH said it was really good and I could make it that way any time, so I guess it's a keeper! LOL
List of Ingredients
***Crust***
1 C. Quick oatmeal, dry
1/3 C. finely chopped nuts
1/3 C. brown sugar
3 to 4 Tbsp. butter, melted
1/2 tsp. cinnamon
In med. bowl mix all ingredients. Press into greased 9 inch pie plate. Bake at 375 for 8 to 10 min. Cool completely.
Filling
1 8oz. cream cheese, softened
1 14oz. sweetened condensed milk
1/3 C. lemon juice
1 tsp. vanilla
Beat cream cheese until light and fluffy. Add milk and blend thoughly. Mix in lemon juice and vanilla until smooth. Pour into prepared crust. Chill 3 hours or until set.
Recipe
***For the crust I did 2 packages of instant apple cinnamon oatmeal and made up the rest in regular quick oatmeal to equal 1 1/3 Cup. I didn't use the chopped nuts as DS#2 doesn't like them. That's why I used 1 1/3 Cup oatmeal total to make up for the missing nuts.***
