    Crème Brulee Cheesecake

    List of Ingredients




    Crust:
    1½ cups graham cracker crumbs
    3 tablespoons sugar
    1/3 cup butter, melted

    Mix all crust ingredients and press firmly in the bottom of 9-inch
    spring form pan.

    Filling:
    3 (8oz) packages cream cheese, softened
    ¾ cup sugar
    1½ teaspoons vanilla
    3 eggs + 1 egg yolk

    Topping:
    ½ cup brown sugar
    1 tablespoon water

    Recipe



    Mix cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs and yolk on at a time mixing well after each addition. Pour into prepared crust. Bake at 350 degrees for 40 minutes or until center is almost set. Remove
    from oven and run knife around sides of pan to loosen cake. Cool on cookie rack until no longer warm on bottom then refrigerate uncovered 3 hours or overnight. Just before serving prepare
    topping as directed below.

    Mix brown sugar and water; spread over top of chilled cheesecake. Place on cookie sheet. Broil 4 to 6 inches from heat 1 to 1 1/2 minutes or until topping is bubbly.
