    Elegant Chocolate Cheese Cake

    Crust:
    2 cup finely crushed chocolate wafers
    ¼ cup sugar
    ¼ teaspoon cinnamon
    7 tablespoon butter, melted
    In a 9-inch spring-form pan, blend crust ingredients. With a spoon, press crumbs over bottom and 3-inches up the sides; set aside.

    Filling:
    4 large eggs
    1½ cup sugar
    6 tablespoon unsweetened cocoa
    1 teaspoon vanilla
    2 (8-oz) packages cream cheese, divided
    4 cup sour cream

    Cream Topping:
    3-ounces cream cheese
    1/2-cup whipping cream
    1/4-cup powered sugar
    1-tablespoon cream de cacao or coffee flavored liqueur

    In a blender combine eggs, sugar, cocoa, vanilla and 8-ounces cream cheese. Cover and blend until smooth; pour half the mixture into a bowl, then add remaining 8-ounces cream cheese to the blender jar, and blend until smooth. Stir in sour cream into mixture in the bowl, and then blend in remaining cheese mixture from blender.
    (If using a mixer, beat cheese until smooth, mix in sugar, cocoa, vanilla and eggs, one at a time, then add sour cream.)
    Pour batter into crumb-lined pan. Bake in 350°F. oven for 1 hour and 20 minutes or until edge is set and dull in color, while the 4-inch center diameter is glossy looking. When cool, remove pan rim and set cake on a serving dish. Pile Cream Topping (below) in the center of the cake. Grate semisweet chocolate over cream.

    Cream Topping: In a mixer bowl, cream cream cheese until soft. Gradually add whipping cream. Mix at high speed to the consistency of stiffly whipped cream. Blend in powered sugar and cream de cacao or coffee flavored liqueur. Cover and chill until ready to use.
