    CRUST:
    ¼ cup butter
    1 ¾ cup graham cracker crumbs

    FILLING:
    1 (8-oz.) package cream cheese, softened
    2 cup cottage cheese, sieved
    2 teaspoon vanilla extract
    1 pinch salt
    3 eggs, separated
    2/3 cup evaporated milk
    2 tablespoon all-purpose flour
    1 tablespoon lemon juice
    2/3 cup sugar

    GARNISH:
    assorted fresh fruit
    fresh mint sprigs

    Recipe



    Preheat oven to 350°.

    Crust:
    Melt butter in a small saucepan over low heat. Stir in graham cracker crumbs. Press mixture in bottom of a greased 9-inch spring-form pan. Set aside.

    Filling:
    Beat cream cheese, cottage cheese, vanilla, salt, egg yolks, milk, flour and lemon juice in a large bowl until smooth. Beat egg whites with sugar until soft peaks form; fold into cheese mixture. Spoon filling into prepared crust. Bake for 1 hour or until set. Chill cheesecake.

    To garnish:
    Slice fruit and arrange on cheesecake. Top with sprigs of mint.
    Makes 10 servings.
