there are quite a few Amish/Mennnite Settlements in rural Missouri and Illinois...Land was cheap and fertile...as the modern "English" lifestyle spreads more to rural areas, the communities have adapted and brought in much needed income by selling baked goods, preserves, quilts and wood furniture to the outsiders [tourists]. Two of the settlements in Missouri are the Bowling Green area and Jamesport...
The following recipe is authentic and mouthwatering...Use butter if you wish but margarine is acceptable. Can be rolled into balls, then sugar and flattened with the bottom of a glass onto a cookie sheet...or dump the dough into a gallon Ziploc bag, seal and cut a corner at the bottom and just squeeze the dough onto the cookie sheet. Dough may be chilled overnight in the refrigerator...I keep these in layers, separated by waxed paper, in cookie tins, hidden until the celebration...
List of Ingredients
1 cup sugar
1 cup powdered sugar
1 cup butter
2 large eggs
1 cup cooking oil
5 cups flour
1 teaspoon cream of tartar
2 tsp vanilla
1 Tab baking soda
Recipe
cream sugars and butter together...add eggs and cream again, then oil. Sift together the dry ingredients and blend into the mixture... drop by small teaspoonful on ungreased cookie sheet.. press down with a fork dipped in sugar.. Bake at 350 degrees for 10 to 12 minutes. Makes 9 to 10 dozen cookies, depending on size
