    Chocolate Marshmallow Cookies

    1 cup (2 sticks) butter
    1-1/4 cups granulated sugar
    3 large egg yolks
    1 tsp pure vanilla extract
    2-1/4 cups all purpose flour
    1/3 cup unsweetened cocoa powder
    1 tsp baking soda
    1/2 tsp cream of tartar
    22 large marshmallows, halved

    FROSTING:
    1 (16 oz=1 lb) box powdered sugar
    2 teaspoons instant coffee powder
    3 tablespoons unsweetened cocoa powder
    1/3 cup butter, softened
    1 tsp pure vanilla extract
    4-5 tablespoons cream or milk

    Recipe

    Heat oven to 350F. Lightly grease cookie sheets. Sift together flour, cocoa, baking soda & cream of tartar. Cream together butter & sugar; beat in egg yolks & vanilla. Stir in flour mixture, mixing well. Roll into heaping tablespoonfuls (size of large walnuts); place on prepared cookie sheets. Do not flatten. Bake 14-15 minutes until tops are cracked & cookies are almost completely baked. Cool 1 min on cookie sheets. Top each cookie with 3 marshmallow halves. Return to oven 2 minutes. Remove from oven; gently spread melted marshmallow to within 1/4" of cookies edge (your fingertips are best tool to use). Cool on waxed paper on countertop 10 minutes .

    Frosting:

    In med bowl, sift together powdered sugar, coffee & cocoa. Beat in butter, vanilla & enough cream to make desired spreading consistency. Beat until smooth & creamy. Frost cooled cookies.
