preheat oven to 400 degrees
line baking sheets with parchment paper
8 oz can almond paste, broken into small pieces
mix with HALF of 3 oz egg whites..
[from 2 1/2 large eggs]
beat on low speed to loosen paste..
combine 4 oz [1 cup plus 2 Tab powdered sugar
and 4 oz [ 1/2 cup plus 1 Tab granulated sugar..
beating on medium speed, slowly add sugars and remaining egg whites, alternating ingredients, until well incorporated..
mixture will be thick, soft, smooth and sticky..
Transfer to a large pastry bag fitted with a large star tip or plain tip...pipe 1" rounds onto parchment, spacing 1 1/2 " apart..
bake 8 to 10 minutes or until light golden brown...do not overbake..
let cool completely, then remove from parchment..3 dozen [2 1/2"] cookies..
NOTE: there is no flour in this recipe...
the tester confirms that her cookies tasted exactly like the ones Ben makes at the bakery, light, airy, slightly chewy with an almond flavor...a St. Louis tradition..
