preheat oven to 325 degrees
combine in a bowl and whisk to blend and set aside
2 cups unbleached all purpose flour
1 tsp baking soda
1/2 tsp baking powder
and 1 tsp salt..
toast 3 cups pecan halves or pieces in preheated oven for 15 minutes..
transfer to food processor bowl and add 2 Tab powdered sugar..
process until pieces are slightly smaller than peas. Set aside
with an electric mixer, beat on low then medium, then high 7/8 of a cup of cold unsalted butter until softened and smooth..
scrape down the bowl often with a rubber spatula..
add 1 1/4 cups powdered sugar on low speed then at high speed for 2 to 3 minutes until light and fluffy, ..
stop and scrape sides and bottom of bowl frequently..
beat in 2 large eggs and 1 1/4 tsp vanilla, scrape down bowl..
beat in nut mixture until well blended. Scrape down bowl..
add flour mixture in 2 or 3 additions at low speed until just combined
spoon cookies at least 2" apart onto lightly greased baking sheets. Bake 30 minutes or until set and just beginning to brown around the edges..
cool on sheets a few minutes then remove to wire racks to cool completely...store in air tight containers..24 large or 48 small cookies
