Cakes:
2 cups flour
½ cup cocoa
1½ teaspoon baking soda
½ teaspoon salt
1 cup sugar
½ cup vegetable shortening
1 cup milk
2 teaspoon vanilla
Filling:
½ cup butter
7½oz jar marshmallow cream
¾ cup powdered sugar
¼ cup vegetable shortening
½ teaspoon vanilla
Recipe
For cakes:
Lightly grease two baking sheets.
Combine dry ingredients and set aside. In a large bowl, with an electric mixer, beat the sugar and shortening for 2-3 minutes, until well blended and fluffy. With mixer at medium-low speed, alternate gradually adding the flour mixture, starting and ending with the flour mixture and mixing well after each addition. Beat in vanilla until well blended. Drop batter by rounded tablespoonfuls onto prepared sheets, spacing the mounds about 2” apart. Bake at 350 degrees until done.
While baking, prepare the filling:
Cream together butter and shortening. Add sugar. Beat until well blended. Add vanilla and marshmallow cream. Beat altogether 3 minutes.
After “cookies” are cool completely, spread filling between 2 and assemble. Make about 20.
