A different way to cook chicken. A family favourite in our house
List of Ingredients
Marinade
125 gr. greek yoghurt
1 Tbs chopped mint (you can use fresh or dried)
800 gr. chicken breast fillets cut into bite size pieces
1/3 cup olive oil
1 cup chopped onions (you can use a mix of both fresh and dried)
2 Tbs chopped mint
400 gr. various cheeses grated (kasseri, crumbled feta, parmesan)
? kg full fat greek yoghurt
3 eggs slightly beaten
Salt and pepper to taste
Recipe
In a large bowl mix the ingredients for the marinade with the chicken and marinate for 1-2 hours.
Heat the oil in a pan and saute the marinated pieces of the chicken until they are almost cooked. Add the onions and saute for and additional 2-3 minutes. Remove from the heat and let the chicken mixture cool down a little.
In a large bowl mix the cheeses, chopped mint, salt and pepper. Add the yoghurt, the beaten eggs and the cooked chicken and mix well with a spoon.
Oil a baking dish and transfer the chicken-yoghurt mixture there. Bake in a moderate oven (180 degrees Celcius) for about 30 minutes or until a nice brown crust is formed on top.
Serve warm.
