3 lbs kantaifi phyllo
4 cups walnuts coarsely chopped
1 1/2 cup butter melted
2 tbs ground cinnamon
1 tbs grounded cloves
1/2 tbs grounded nutmeg
2 eggs beaten
4 tbs sugar
FOR THE SYRUP:
6oz sugar
5 cups water
1 lemon rind
1 tbs lemon juice

Mix in a bowl the walnuts, sugar, cloves, cinnamon, nutmeg, eggs, sugar. Gently open the kantaifi pastry with your fingers. Taking a little bit of kantaifi each time (cover the remaining pastry with a wet towel or otherwise it would dry) lay it on your working surface and put 1 1/2 tbs of the walnut mixture to one end. Then roll the pastry into a cylinder. Take care to fold the pastry a little tight at first so that the filling is securely enclosed.Place the pieces into a buttered baking dish. Pout the melted butter and cover each piece with it. Bake in moderate oven for about 30-40min or until the top is golden. Meanwhile prepare the syrup. Boil the sugar,water,lemon rind and juice for 5-7min. After removing the kantaifi from the oven and before it cools compeletely poyr the boiling syrup over it. Cover the pastry with a clean towel and let it cool as it absorbs the syrup. NOTE: Make sure to leave a little space between each piece of kantaifi whe placing them in the baking dish. Otherwise the sides wont bake and the syrup will make the pastry soggy.
