    Raspberries: Blue Owl Restaurant Raspberry Streusel Bread

    List of Ingredients

    1/3 cup sugar
    1/4 cup flour
    1/4 cup pecans -- chopped
    2 tablespoons butter -- melted
    1 1/2 cups flour
    2/3 cup sugar
    2 teaspoons baking powder
    1/2 teaspoon salt
    1/2 cup milk
    1/4 cup vegetable oil
    1 egg
    1 teaspoon vanilla
    1 cup frozen unsweetened raspberries
    2 mini loaf pans


    Recipe

    In small bowl, stir together the first 4 ingredients until crumbly; set aside. In large mixing bowl, stir together flour, sugar, baking powder and salt. In small bowl, stir together milk, egg, oil and vanilla. Pour into flour mixture. Stir just until dry ingredients are moistened. Fold in frozen raspberries. Spoon batter into greased and floured mini pans, filling two-thirds full. Top each with about 4 heaping tablespoons of the topping mixture. Bake in 400º oven for 35 to 40 minutes, or until a toothpick inserted in center comes out clean. Cool slightly on a wire rack.

    Yield:
