    Pineapple: Pineapple Coconut Twist Bars

    List of Ingredients

    1 1/8 cup cake flour
    3 tablespoon canola oil
    ½ cup sugar
    8oz fat-free cream cheese, softened
    1 egg
    1 teaspoon vanilla
    1/8 teaspoon pineapple extract
    20oz crushed pineapple
    1/3 cup shredded coconut
    ¼ cup sliced almond

    Recipe

    In a small bowl, mix flour, oil and ¼ cup sugar until crumbly. Press into bottom of 9” square pan. Bake at 350 degrees for 10 minutes. Remove from oven. In a large bowl, beat cream cheese, egg, ¼ cup sugar, vanilla and extract. Drain pineapple and add to other ingredients. Blend. Pour mixture over crust and top with coconut and almonds. Bake for 30-35 minutes or until golden. Cool on rack. Refrigerate at least two hours before cutting.
