Recipe Introduction
While on a vacation to WDW, we ate at the Sci-Fi Dine In Theater at Disney-MGM. The movie screen, the cars, the ‘night sky’, even the fence are as memorable as the rest of WDW. The food, though, holds a higher place in my mind. One so that I made a special inquiry to them as for the recipe. I was blessed with the following:

List of Ingredients
4 slabs St. Louis style ribs
48oz coke
2oz spice rub (recipe follows)
BBQ sauce (recipe follows)
Spice Rub for Ribs
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon ground black pepper
1 teaspoon curry powder
1 teaspoon garlic powder
1 teaspoon Lawry’s Seasoning Salt
1teaspoon brown sugar
½ teaspoon Kosher salt
Sci-Fi Barbecue Sauce:
Pinch ground cloves
8oz veal stock
1oz garlic, chopped
20oz ketchup
1oz lemon juice
Fresh lime juice
3oz molasses
1 teaspoon yellow mustard
1 tablespoon Kosher salt
1oz Worcestershire sauce
Pinch nutmeg
1oz canola oil
2oz green pepper, chopped
1½oz cider vinegar
4oz onion, chopped
½oz liquid smoke
3oz brown sugar
1 teaspoon black pepper
Water-as needed for desired thickness
8 dashes Tabasco
Recipe
Score belly side of ribs across bones with sharp knife in a crisscross pattern. (This prevents meat from tightening up on the bone, for better presentation). Rub topside of the ribs with BBQ spice, cover with coke and cover roasting pan with foil. Bake at 350 degrees for 2 hours. Remove from pan and baste with BBQ sauce.
Spice Rub for Ribs:
Mix all ingredients. Rub on ribs.
Sci-Fi Barbecue Sauce:
Sautee onion, peppers and garlic until they start to brown and deglaze pan with vinegar and add the rest of the ingredients. Simmer 4 hours and chill
