1 pound ground beef
1 medium onion, chopped
2 green onions, sliced
1/4 teaspoon dried basil
1/2 tablespoon dry mustard
2 tablespoons chopped fresh garlic
17 ounces whole kernel corn, drained
11 ounces condensed tomato bisque soup -- undiluted
3/4 teaspoon salt
1/2 teaspoon pepper
1/4 cup grated Parmesan cheese
2 1/2 cups hot mashed potatoes
6 slices process cheese
Recipe
In a skillet, brown ground beef; drain. Add the onion; saute until transparent. Stir in basil, mustard, garlic, corn and tomato soup; simmer for 10-15 minutes. Add salt, pepper and cheese. Spoon into a 13x9 inch baking dish. top with mashed potatoes; cover with cheese slices. Bake at 275ºF, uncovered, for 40 minutes. Yield: 4 servings.
