Ham and Potato Skillet

1 pound ground fully cooked ham
1 1/2 cups thinly sliced celery
4 cups chopped potatoes
1 1/2 cups frozen cut green beans
1 cup chopped onion
1 cup water
1/2 teaspoon crushed dried thyme leaves
salt and pepper to taste
grated Parmesan cheese
Recipe
Spray a large skillet with cooking spray. In the skillet cook ham, celery, and onion until vegetables are tender. Stir in potatoes, water, thyme, and pepper. Bring to a boil; reduce heat. Cover and simmer for about 20 minutes or until potatoes are tender and most of the liquid is absorbed. Add frozen green beans the last 8 minutes of cooking. Top with grated Parmesan cheese before serving. Serves 4.
