1¾ cups crushed saltine crackers
2 cups cooked rice
3 lbs. ground beef
1 large onion, chopped
1½ cups tomato juice
¾ cup water
3 tablespoon taco seasoning mix
Seasoned salt, salt & pepper to taste
4 cups shredded lettuce
3 medium tomatoes, diced
½ cup butter
½ cup all-purpose flour
4 cups milk
1 lb. processed American cheese, cubed
3 cups shredded sharp cheddar cheese
1 (10 oz) jar stuffed olives, drained & sliced
1 (14½oz) pkg. tortilla chips
Recipe
In 2 (13x9x2) serving dishes, divide crackers. Top with rice. In a skillet cook ground beef and onion, drain well. Add tomato juice, water, and seasonings. Simmer 15 minutes. Spoon over rice. In a saucepan, melt butter, stir in flour until smooth. Gradually add milk and bring to a boil; cook & stir for 2 minutes. Reduce heat and stir in cubed American cheese until melted. Pour over seasoned meat. Top with lettuce, tomatoes, cheddar cheese and olives. Serve with tortilla chips. Yields: 10-12 servings
