Almond-Pumpkin Muffins w/Struesel Top

1/3 cup butter or margarine
1 cup firmly packed brown sugar
1/3 cup molasses
1 egg
1 cup pumpkin
1 cup oat bran
1 cup all-purpose flour
1 tablespoon pumpkin pie spice
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup chopped almonds
STREUSEL TOPPING
1/4 cup sugar
1/2 teaspoon ground cinnamon
2 tablespoons all-purpose flour
1 tablespoon butter or margarine
Recipe
Preheat oven to 350°F. Spray 12 muffin cups with non-stick vegetable spray.
In a large mixing bowl, cream butter, sugar, and molasses until light and fluffy. Add egg and pumpkin, beating until well blended. Add flour, baking soda, baking powder, and salt, stirring until just moistened. Stir in almonds. Fill muffin cups three-fourths full. Sprinkle Streusel Topping over each muffin.
Bake 35 to 40 minutes or until a tester inserted in the center comes out clean. Serve warm.
STREUSEL TOPPING
In a small bowl, combine all ingredients, mixing until crumbly.
