Apple Cranberry Nut Muffins

2 cups grated apples
1-1/3 cups sugar
1 cup chopped cranberries
1 cup grated carrots
1 cup chopped walnuts
2-1/2 cups self-rising flour
2 teaspoons ground cinnamon
2 eggs, lightly beaten
1/2 cup vegetable oil
Recipe
Preheat oven to 375°F. Spray 18 muffin cups with non-stick vegetable spray.
In a large mixing bowl, combine apples and sugar; toss to miss well. Gently fold in cranberries, carrots, and walnuts. Add flour and cinnamon; mix until well moistened. Add eggs and oil; stir until well blended. Spoon into prepared muffin cups, filling two-thirds full.
Bake 20 to 25 minutes or until golden brown. Serve warm.
