1-3/4 cups self-rising flour
1/2 cup sugar
2 eggs
2/3 cup milk
1/3 cup butter or margarine, melted
1 teaspoon grated lemon rind
1/2 cup strawberry or raspberry jam
Recipe
Preheat oven to 400°F. Spray 12 muffin cups with non-stick vegetable spray.
In a large mixing bowl, combine flour and sugar.
In a small bowl, beat eggs lightly; add milk, butter, and lemon rind. Pour into flour mixture, stirring until just moistened. Spoon half the batter into prepared muffin cups. Make a well in the center; add jam. Spoon remaining batter over jam.
Bake 20 to 25 minutes or until golden brown
