Orange-Sour Cream Muffins

3 oranges
1/2 cup water
5 tablespoons butter or margarine
2 cups self-rising flour
2 eggs
3/4 cup sour cream
3/4 cup milk

Preheat oven to 375°F. Spray 18 muffin cups with non-stick vegetable spray.
Finely grate 1/4 cup zest from the oranges.
In a small saucepan, combine orange zest, 1/4 cup sugar, and water; cook, stirring constantly, until sugar dissolves. Add butter; stir until butter is melted. Set aside.
In a medium bowl, combine flour and remaining sugar. Set aside.
In a large mixing bowl, combine eggs, sour cream, milk and orange mixture, whisking until smooth. Add flour mixture, stirring until blended. Fill muffin cups three fourths full.
Bake 15 to 20 minutes or until golden brown.
