Chicken Coconut Curry

List of Ingredients
2 tbsp oil
3 pound chicken legs including thighs and drumsticks.
2 green chilies, stemmed, seeded, and finely chopped
1 med yellow onion diced
1 tbsp fresh ginger, grated
2-1/2 c coconut milk canned
1 tsp ground cinnamon
1 pinch saffron
1 tsp salt
1/4 tsp pepper
2 tbsp lime juice
1/4 c unsalted, roasted peanuts
Recipe
Heat the oil in lg skillet over med-high heat.
Add the chicken legs and cook, turning, until browned well on all sides, about 5 minutes. Transfer the chicken to a plate, cover and set aside.
Add the onion, chiles, and ginger to the skillet and cook, stirring occasionally, until the onion is softened, about 5 minutes. Add the coconut milk, cinnamon, saffron, salt, and pepper and bring to a simmer.
Return the browned chicken to the skillet, cover,and simmer until the chicken comes easily away from the bone, about 45 minutes. Stir in the lime juice. Garnish with the cilantro and peanuts and serve.
