This section is for those individuals who are on a Gluten-Free diet. I have recently found out that a friend of mine, Carol, has a granddaughter, Shelbie Janelle Morton, that has Celiacs Disease. Here is a story about a beautiful nine years old little girl with dark red hair down below her waist with beautiful brown eyes. As sick as she is, vomiting, migraines, and other intestinal problems, plus moving, she got her first report card....all A's. Everyone is so proud of her. She goes to school sick alot or can't make it at all. Her gastro specialist is optimistic but said she has to stick to the gluten free and never let gluten in her body. She has a list of allergies as long as your arm, including dairy, fish and mold. She gets allergy shots weekly, one each arm. Shelbie is also Immune Deficient. Her immune system does not work so she is the worse case scenario. She gets gamma infusion every three weeks. It takes three to four hours and this is helping her respiratory system. Shelbie, with acid reflux, can't have anything carbonated. Gluten free cannot have any soda with caramel coloring. I recently got blessed to receive an email from her. Here is a portion from her: “I have been dairy free since I was four. That is also when I was diagnosed with acid reflux. Once a year I have an endoscopy to check my esophagus. In the last five years I have had seventeen procedures where I was put to sleep. I had my tonsil and adenoids out at five and adenoids again at eight. I had four sets of tubes in my ears and had to go back to have a hole repaired in one ear. My eyes didn't work together so i went through six months of visual therapy. Now I wear glasses with bi-focals. I love animals...any kind. My MomMom (Carol) has a cat she got just for me. I have also had two nose surgeries. To fix the terbinates. Mine swell and I can't breathe. The last surgeon took out too much so now I have none which doesn't help my allergies. I actually have nine specialists I go to. Most are in Reading, Pa. but three are at Dupont Children’s Hospital in Wilmington, Delaware. It was hard on the dairy free diet but I am willing to try this new diet if it makes me feel better. I just moved into a new house with my Mom and Dad. My room is lavender, sage green and mauve. I like my new school now, especially since my cousin Damien goes there too.” At restaurants, meat cannot be cooked on same grill as anything breaded, again contamination. The only fast food she can have is McDonalds french fries...fried separately, not with onion rings. Contamination is a big problem. She cannot even have turkey baked with stuffing inside, again contamination. She even has her own toaster because regular bread can contaminate hers. She cannot have most national brand cereals but several generic (bag) cereals she can. She cannot have Rice Krispy treats but we can make our with generic krispy rice. Only McCormack seasonings...straight seasonings, no mixtures. Heinz ketchup is ok as is Hellmann's Mayo. She and her family has a passion for NASCAR. Shelbie has been to many races and camps at race tracks for six days at a time. When she was five she like Jeff Gordon, she’s even got to meet him She loves animals, so she plans on being a vet. She is so used to hospitals that nothing freaks her out. Her parents went to her teacher conference and talked to two of her teachers. She is still doing very well even with the medical problems. She is carrying a 98 average, if not 100 in every class. She had to catch up with the kids...they had cursive writing last year and she didn't but is doing great. She loves to read and write. She wants me to get her a sketch pad and colored pencils for Christmas..she loves to draw. She uses the computer alot. This disease is life threatening, that can be inherited, causes cancer in intestines and so people have to stick to this diet....no mistakes. It is a struggle, but has to been done.
