Chief Dave’s Irish Stout Stew

Recipe Introduction
The full flavor of dark ale(Guinness Stout) goes well with beef. This recipe serves 4 to 6 starving firefighters. A good warm bread goes well with this stew.
List of Ingredients
2 pounds stew meat
3 tablespoons flour
2 tablespoons oil
2 cups onions, diced
1½ cups carrots, diced
1 teaspoon garlic, minced
½ cup crushed tomatoes
1 cup Irish stout (Guinness)
2 cups beef broth (if using bouillon cubes, find the unsalted type)
½ teaspoon thyme
Salt & pepper to taste
Recipe
Heat the oil in a heavy skillet. Toss the beef, flour, salt and pepper in a large bowl. Add the beef to the hot oil and brown well. Add the remaining ingredients. Slowly bring to a boil. Reduce the heat and simmer until the beef and vegetables are tender (about 1½ hours).
This is great on a cold, raw day. The alcohol cooks out leaving only the flavor.
