List of Ingredients
3 qts. water
1 1/2 lbs. beef sirloin, cut into cubes
1/2 cup beef base
1 cup diced onion
1 cup diced celery
3 cups diced carrots
4 large leftover baked potatoes, diced small with the skin on
1/2 cup instant potato flakes
3/4 tsp. granulated garlic
1/2 tsp. ground black pepper
1 slice Provolone cheese, diced
1/4 cup Worcestershire sauce
1 T. browning sauce
1/2 cup unsalted butter
3/4 cup all-purpose flour
Recipe
In an 8-qt. stockpot, combine water, beef, beef base, onion, celery, and carrots. Cover; cook over medium heat for 30 minutes. Add baked potatoes, potato flakes, garlic, pepper, cheese ,Worcestershire and browning sauce. Simmer, uncovered for 20 minutes. Meanwhile, prepare a roux: Melt butter in a skillet; stir in flour until smooth. Remove from heat. After soup has simmered for 20 minutes, whisk in roux until blended. Yields:14 (12 oz.) servings.
