Recipe Introduction
I also make this for the snack shack at the high school during water polo and swim season. The kids love it and we sell out right away. Kids from other schools are always asking of we have it. I named it Ding Dong Ditch soup because a dear friend left it (with a loaf of french bread and salad fixings) on my door step one chilly afternoon.
List of Ingredients
1 lb. Italian sausage
1 cup onion, chopped
2 garlic cloves, minced
5 cup beef broth
1/2 cup water
1/2 cup red wine
28 oz. diced tomatoes (or 2 C fresh)
1 cup carrots, thinly sliced
1/2 teaspoon basil
1/2 teaspoon oregano
8 oz. tomato sauce
1 1/2 cup zucchini, sliced
8 oz. frozen tortellini (or 2 C macaroni or 8 oz. frozen ravioli)
1 bell pepper, chopped
fresh parsley
Recipe
Brown sausage, onion and garlic. Drain. Add broth, water, wine, tomatoes, carrots, basil, oregano and tomato sauce. Bring to a boil and simmer uncovered 30 minutes. Skim fat and add remaining ingredients. Cover and simmer 35-40 minutes. Serve with grated romano cheese and fresh bread.
I frequently double this and you may use half sausage and half hamburger.
