Elsah's Landing Restaurant Harvest Minestrone

2 oz salt pork, blanched and diced
remove rind. Cover pork with boiling water...soak for 20 minutes...drain and dice..
chill for easier dicing..
I have substituted about 6 pieces of fatty bacon .cut up and fry and use drippings to brown
1/2 lb. of ground beef. Same directions for salt pork..
add 2 medium onions, diced
1 cup chopped celery
1 clove minced garlic
to browned beef..
cook over medium heat for 5 to 10 minutes or until vegetables are tender..
combine in a large pan..
4 cups water
6 oz tomato paste
1/2 cup chopped fresh parsley
1 tsp. thyme
1 tsp. salt
1/2 tsp/ oregano with meat mixture and salt pork or bacon..
reduce heat, cover and simmer for 15 minutes..
add 1 pound washed fresh spinach
2 large zucchini, diced
8 oz can baby lima beans..
cover and simmer for 15 minutes..
stir in 1/2 cup elbow macaroni, cooked al dente..
garnish each serving with grated Parmesan cheese. Serves 4 to 6
