Closed a few years ago...dimming the spotlight but not the memories of Charlotte Peters. The First Lady Of St. Louis Television in the 50's and 60's...Charlotte was a very gutsy lady who approached the NBC affiliate in St. Louis and did a live noontime variety show and featured skits, music and visits by celebrities passing through town...her sidekick, organist Stan Kann never knew what zany off -the- cuff thing she would pull off at the last minute in front of a live, on -camera audience....after she retired , her daughter Pat and Pat's husband opened a BBQ place based on Charlotte's sauce...and ran it for many years...Charlotte loved people and was loved by St. Louis...BTW, her son is cartoonist Mike Peters. Mother Goose and Grimm and political cartoons...she was a great lady!!
Hickory Smoked BBQ Pork Loin and Sauce
4 to 5 lb boneless pork loin, rolled and tied
1/2 Lawry's season salt
1/4 cup oregano flakes
1 cup water
Hickory chips
Sprinkle meat with season salt and oregano all over and place in roasting pan...pour water into pan...roast at 350 degrees for two hours or until meat thermometer reaches 150 F.
transfer meat to bbq grill over medium hot coals that have been generously sprinkled with Hickory chips...leave thermometer in meat....
lower lid on grill, leaving one vent open and check roast and rotate.. smoke roast until 170 F....remove any strings. Slice and serve heated sauce on the side...
Sweet Richard BBQ Sauce
1 3/4 cup ketchup
1 1/2 cups brown sugar
1 Tab fresh lemon juice
1 Tab Worcestershire Sauce
1 tsp garlic salt
cook on stove until heated through...serve hot. makes 3 cups...can be made ahead and refrigerated.....
