Aimee Campbell was a doctoral anthropology student at Washington University in 1990 when she entered this recipe in the cold soups contest, sponsored by the local paper. Gazpacho had the most entries, followed by chilled cucumber and then strawberry soup. Aimee's was a one of a kind, first place winner....originally from a friend of her New Jersey mother. In 1990, she was looking forward to a long stay in Cost Rico to study the native flora and fauna. Put in a thermos, keep iced and serve at a picnic for two in mugs..
4 medium sized cantaloupes, cleaned and cut into 2" chunks
1 1/2 cups apple juice
Process until smooth. Add:
2/3 cup sugar
Blend a few seconds. Pour into a large bowl and add:
1/2 cup white wine or non-alcoholic sparkler
1 Tab fresh lemon juice
3/4 tsp. ground ginger
3/4 tsp vanilla
Stir well and cover. Chill at least 4 hours. Serve cold, garnished with a thin lime slice
serves 8. This would be an elegant first course or nice accompaniment to luncheon sandwich..
