    List of Ingredients




    1 10 oz package frozen peas,
    2 cups shredded iceberg lettuce
    1 can[13 3/4 oz] chicken broth
    1/3 cup water
    1/4 cup tomato juice [or V8]
    1/4 cup finely diced onion
    1 tab fresh chopped parsley
    1/2tsp. salt
    1/4 tsp white pepper
    1/4 tsp thyme, crushed

    Recipe



    Mix all in 2 qt saucepan and bring to a boil, reduce heat, cover and simmer 20 minutes...
    turn into blender in small batches and blend until smooth...cool slightly in glass bowl. Stir in 1/2 cup whipping cream.. cover and chill. serve with garnish of dollop of sour cream and sprig of fresh mint...
    serves 4 .can easily be doubled, do not freeze.... most men are rather suspect of cold soups. Perhaps the whole image of frou-frou ladies food is unsettling. This is also good warm. It needs a few hours chilled for the flavors to blend, and then it could be quickly reheated, NOT boiled, and served...perhaps with some croutons...
