Recipe Introduction
Nancy Waddell
President, Herb Society
Webster Groves, Missouri
Nancy Kirchoff is President of the St. Louis Herb Society and likes the strong flavor of Rosemary ..she pours a mixture of balsamic vinegar and minced Rosemary over fresh strawberries.
For a simple side dish drizzle olive oil mixed with Rosemary over quartered new red potatoes and bake about 35 minutes. For a fantastic taste, substitute small Yukon Gold for the red potatoes.
Nancy grows over 100 varieties of mint at her home in Cedar Hill, Missouri.
Lavender especially complements baked goods , muffins, breads, scones. So the next time you are at the Farmer's Market or the Nursery Center, pick up a few herbs , re-pot in terra cotta clay pots, [they hate plastic] or find a sunny spot in the garden, don't overwater.. and try some new culinary treats. If you are an apartment dweller, find a sunny window sill.
1 clove garlic, minced
1/2 cup chopped onion
Sauté in 2 Tab butter until soft. Stir in 2 Tab flour, then
5 cups chicken broth
Stirring constantly, add:
3 Tab fresh lovage leaves
5 cups peeled, diced potatoes
salt and pepper
Cook until tender. Stir in 1 1/3 cups half and half. Puree in batches in blender. Transfer to pot , add a little cream or water if it is too thick. Heat again; do not boil, and serve, garnish with fresh herb..
