Elsah's Landing Restaurant Cream of Lettuce Soup

1 large head iceberg lettuce, washed and chopped. Combine with
4 cups fresh chicken stock in a large pot
or use 1 1/2 Tab chicken bouillon with 4 cups water..
cover and simmer for 15 minutes..
pour in small quantities into blender and pulse just until grainy but NOT pureed. It should have a sauce texture..
return to pot.
add 1/4 cup butter
1 cup Carnation evaporated milk or
1 cup light cream..
bring to a simmer. Add additional cream if desired
add a grating of fresh nutmeg.
1/2 cup whipping cream, whipped
garnish each serving with a dollop
serves 6
