The pimentos and garlic makes for a great side dish from the French-Spanish border. Firefighters like the rest of the world love something different in their meals. This is a great replacement for the standard baked potato, mashed potatoes, or French fries.
List of Ingredients
1½ tablespoons olive oil
1 medium onion, sliced
½ teaspoon garlic, minced
½ cup parsley, chopped
¼ cup pimentos, drained and chopped
6 medium potatoes, sliced ¼ inch thick
1 cup chicken broth ( If made from bouillon cubes, use the salt free)
Salt and pepper to taste
Recipe
Heat oil in a heavy skillet (that has a lid). Add the onion and garlic. Cook until soft. Add the remaining ingredients and stir. Cover and simmer for 20 minutes or until the potatoes are soft.
This one is great as left-overs, a day in the fridge enhances the flavor, reheat in the microwave and enjoy.
