Fratelli's Restorante is a local restaurant owned by 2 brothers, Tom and Joe Alagna. Fratelli means brother in Italian. They have the best pizza and other great Italian dishes. Here is one of their delicious entrees
List of Ingredients
3 cloves garlic
Salt
1/2 tsp. ground black pepper
1/3 cup extra virgin olive oil plus more for drizzling
1 (28 oz.)can peeled Roma tomatoes
1/4 cup chopped fresh basil leaves
About 8 ounces uncooked penne pasta
2 cups broccoli florets
1 cup sliced mushrooms
1/2 cup sliced sun-dried tomatoes
1/4 cup grated Asiago or Romano cheese
Recipe
To prepare sauce: Place garlic, 1 tsp. salt, pepper and olive oil in a food processor. Process for about 1 minute or until creamy. Pour into bowl. Drain liquid from tomatoes into a 2-cup measure. Pour half of liquid into garlic-olive oil mixture; discard the rest. Cut tomatoes into 1-inch cubes. Add tomatoes and 1/4 cup chopped basil to bowl. Stir to combine. Set aside.
To prepare pasta:
Bring a large pot of salted water to a rapid boil. Add pasta; cook, stirring occasionally. When pasta has almost reached the ala dente stage, add broccoli, mushrooms and sun-dried tomatoes to the pot. When water boils again, drain pasta and vegetables. In a large bowl, toss pasta and vegetables with sauce. Arrange pasta on 4 plates. Sprinkle each serving with cheese. May drizzle with extra olive oil.
