    Lemon-Poppyseed Shortbread

    sift 3/4 cup powdered sugar..
    using a mixer, add
    1 cup unsalted butter, softened, to the sugar..
    beat on low speed until smooth and creamy, about 2 minutes. Add
    1 1/2 tsp. fresh lemon juice
    1 1/2 tsp. grated lemon zest
    1/2 tsp. vanilla, beat well

    sift 2 cups flour into a bowl, add
    1 1/2 Tab Poppy seeds
    1/2 tsp. salt
    stir to combine

    add dry ingredients to butter mixture,
    with hands, knead until well mixed.
    form dough into a disk, wrap in plastic wrap, and chill at least three hours and up to 3 days..

    preheat oven to 300 degrees. let dough sit at room temperature for 15 minutes.
    roll between 2 sheets of waxed paper to a 1/4" rectangle, about 10"x12"...
    if dough seems soft, return to fridge to chill about 30 minutes..
    cut into 3'x2' bars or diagonally, forming triangles..

    place 1 " apart on ungreased cookie sheets. Prick with a fork, bake until golden brown all over, 23 to 25 minutes..
    let cool on wire racks. Makes 20 cookies
    serve with coffee or tea..
