Recipe Introduction
In the St. Louis area we have a grocery chain that also has a cooking school. I have enjoyed many of these classes and would like to share with you another cookie recipe that I make for Christmas that is from their cookie class.
List of Ingredients
1/2 cup butter -- softened
1/2 cup brown sugar -- firmly packed
2 egg yolks
1 3/4 cups flour
1/2 cup seedless raspberry jam
2 8 ounce packages cream cheese -- softened
2/3 cup sugar
2 eggs
2 teaspoons almond extract
1/2 cup mini chocolate chips
Recipe
For crust: In medium mixing bowl, combine butter, brown sugar and egg yolks. Add flour, and use pastry blender to incorporate. ( Mixture should be crumbly. ) Spoon 1 teaspoon into paper lined mini-muffin cups and flatten with tart tamper. Bake in 375 degree oven for 5 minutes. Place jam in small disposable pastry bag; cut off top and pipe small amount of jam ( about 1/3 teaspoon ) on top of each baked crust.
For filling: In medium bowl, beat cream cheese with sugar until smooth. Beat in eggs and extract until light and fluffy. Fold in mini chips. Fill each muffin cup with cream cheese filling. Bake in 375 degree oven for 9 to 11 minutes or until filling is set. Cool slightly, remove from pan. Refrigerate.
