    Ozzie Smith’s Collard Greens

    Most everyone knows that Ozzie Smith is the "retired" St. Louis Cardinals baseball shortstop who will be inducted into the Baseball Hall of Fame this year. He also has two restaurants in the St. Louis area -- Ozzie Smith's and Smith and Slay's. To prevent burning, handle the habanero pepper with latex gloves.

    List of Ingredients




    2 large bunches collard greens
    3 or 4 ribs of celery
    1 medium green bell pepper
    1 medium white onion
    1 T. salt
    1 T. ground black pepper
    1 smoked turkey leg, or 2 cups of turkey leg meat
    2 C. seasoned ham chunks
    1 T. granulated garlic
    1 habanero pepper (thinly slice and put in three rings)

    Recipe




    Wash greens; remove stems and shake off excess water. Roll 4 or 5 leaves together; slice no more than 1/4 inch thick. Place in large pot of water (about 4 quarts) and bring to boil. Wash celery and trim ends. Halve ribs lengthwise, then slice thinly. Add to pot. Wash bell pepper, remove seeds and cut in strips 1/4 inch thick. Add to pot. Peel onion, cut in quarters, slice thinly and put in pot. Add salt, pepper, turkey and ham. Cook at a rapid boil about 20 to 30 minutes. Add garlic. Add habanero rings. Boil about 30 minutes more. Yield: 8 servings
