1 egg white beat until stiff...
slowly add 1/2 cup sugar, beating until white is glossy..
fold in 3/4 cup salted peanuts..
drop mixture onto wax paper lined baking sheets
bake at 325 degrees for 45 minutes. Turn off oven. Leave cookies in oven for 15 minutes more. Let cool before serving..
cookies can be stored between layers of wax paper in tightly sealed tins at room temperature for as long as a week..2 1/2 dozen cookies..
