2 lbs raw potatoes, peeled and shredded, keep in a bowl of ice water with a squeeze of lemon juice...drain and press dry...
mix with 2 eggs, 1 tab flour
1 finely chopped onion
salt
heat oil in skillet and spoon out rounds of batter...fry pancakes crisp on both sides....serve with a side dish of sour cream and chopped fresh chives...keep warm in a low heat oven..
